Recipe
1 package (8 cups) salad greens of choice
2 tomatoes, diced
½ cup cucumber, sliced
½ cup green onion, diced
4 tbsp canola oil or vinaigrette
Protein of choice:
- ¾ cup rinsed canned beans
- 75g canned salmon or tuna
- 2 hard boiled eggs
- 75g lean smoked, deli, or leftover meat
- 50g cheese (feta, cheddar, etc. Look for options with less than 20% MF)
- ½ cup cottage cheese
Directions:
Wash and tear salad greens and place in large bowl.
Toss greens with remaining ingredients, drizzle with dressing and top with protein option of choice.
Makes 4 servings.
